Pictured here I ran out of pattypan squashes and had some yummy summer squash from the
South Central Farmers CSA box (tons of produce in a box for $20-$40 sliding scale), but this really is best with the cute yellow pattypans!
- Chop up some summer squash.
- Cut some heirloom tomatoes into big chunks (also from South Central Farmers Cooperative).
- For kicks the second time I made it I threw in some bell peppers. Up to you!
- Mince some garlic, drizzle some olive oil, add some salt and pepper and throw it in the oven! I put it at around 400 degrees, and left it until they were shrunken but not burned. So delish! (Those tomatoes better be local and yummy though!)
