Pattypan Heirloom Roast

Pictured here I ran out of pattypan squashes and had some yummy summer squash from the South Central Farmers CSA box (tons of produce in a box for $20-$40 sliding scale), but this really is best with the cute yellow pattypans!


  1. Chop up some summer squash.
  2. Cut some heirloom tomatoes into big chunks (also from South Central Farmers Cooperative).
  3. For kicks the second time I made it I threw in some bell peppers. Up to you!
  4. Mince some garlic, drizzle some olive oil, add some salt and pepper and throw it in the oven! I put it at around 400 degrees, and left it until they were shrunken but not burned. So delish! (Those tomatoes better be local and yummy though!)
