Our friends Chales came over for this gluten free (almost) vegan meal last night.
Mung beans n rice recipe from my favorite, Deborah Madison. See pic for recipe. Added some Ginger Tamari Cabbage and Garlic kale (Dino kale w lots of minced garlic sautéed on the stove) as sides.
Don't skip out on the spicy tomato topping, and instead of yogurt we used goat kefir.
