Sprouting Chia Seeds

Chia seeds (Salvia hispanica) are super nutritious! Sofia ordered some online and I said why do we have all these tiny chia seeds in our mailbox? She said next to flax they are the highest source of omega-3 fatty acids. (We also learned this and more from our new book, Healing with Whole Foods by Paul Pitchford).

They can be soaked in some water to create a cool gel. I poured some of this gel into black beans I was boiling, and into eggs I was scrambling. Also you can just sprinkle them raw on your toast or oatmeal or whatever you're eating.

I wanted to sprout them. I found online that the best way to sprout them is on a paper towel, laid over a plate, misted with water. I sprinkled the chia seeds on the moist paper towel and left them overnight. They were dry so in the morning I sprayed them with a water sprayer, and have been doing so all day. The seeds are popping out their little sprouts! Can't wait to eat them, I'll give them one more day.
