This was a summer thing I never ended up posting. Abundance of cherry tomatoes!! Though we hit 80 degrees over the weekend, I haven't been grilling (or finding an abundance of cherry tomatoes). I have also made this on the stove but duh, it's not as good!!
- Peel an onion. Cut a layer off at a time and then cut it into about an inch square.
- Cut bell peppers into same size pieces as the onion.
- Slice up some zucchini.
- Make pretty skewers alternating with the colors of the zucchini, cherry tomatoes, bell peppers and onion! Drizzle a little olive oil on them on a plate before grilling. Enjoy!
