Sesame Ginger Tofu Carrots

A mix between the Mmm Sesame Tofu and Tempeh Carrot Roast recipes!

  1. Chop up firm tofu into cubes. Put in a cast iron with a couple pressed garlic cloves and some minced ginger root to taste. Drizzle toasted sesame oil on top. Let sit for a little bit.
  2. Cut carrots lengthwise into quarters, then make them shorter.
  3. Mix them up with the tofu and throw in the oven at about 350 until the tofu is browned and doesn't taste raw in the middle anymore.
