My cousin in Italy also made this - I love eating non-Italian food when I'm visiting my family. Defies the myth that Italians only eat pasta and pizza (even though they do).
- Chop up some red onion, cherry tomatoes, bell pepper.
- Throw in some kalamata olives to taste (I don't like too many since they are so salty).
- Crumble some feta cheese (don't buy the low fat, it has more sodium than the normal kind!)
- Mix it up with some olive oil and you're done! You probably won't need to add salt because of the olives, but you can add some ground pepper.
