Been staring at these Lima beans in their cute little glass jar -- it was their time for the spotlight. Soaked them overnight so they opened up and started to sprout. Boiled them in water and added a veggie bouillon cube (The Organic Gourmet brand found at Whole Foods). In a pan sautéed a fresh onion, carrots and broccoli with coconut oil, salt, pepper and fresh thyme sprigs from the garden. When those were nice and coated I threw it all into the Lima bean pot and simmered them (sprigs and all) until they were soft but not totally mushy.
With reheating, the broccoli became a delicious mush that coated all the beans.
A simple hearty soup!
