What do you do when you're going to a meaty taco party on the 4th? Bring your own filling and share!I was inspired by these so-so plantain tacos we had by The Taco Project at a screening of Happy on LA, and looked up a few recipes. One is here by Vegan Soul Power! Basically fry the plantains in some Earth Balance and sprinkle some brown sugar on at the end.
I meant to buy sweet potatoes but got white yams instead; they worked. Inspired by this recipe on Naturally Ella, I made my own version. In a pot heat up coconut oil, juice of half a lime, agave syrup, chipotle chili powder, and salt. Add a chopped onion and diced jalapeño. Sautée then add small cubes of yams or sweet potatoes and stir them to coat them. Add water and simmer so they cook through but don't get too mushy and still hold some of their shape. Add the second half of the lime juice.
Mix up plantains and yams on a heated tortilla w some salsas or hot sauce and enjoy! In this pic, yes, there is queso fresco on top...
