Raw Vegan "Ceviche"

Inspired by Cafe Gratitude and this recipe...

Chop into little matchsticks - carrots, radishes, zucchini. Add corn cut from the cob, avocado, cilantro, tomato, mango, red onion and young Thai coconut (I bought one and Monely and Ceci opened it, got the juice out, and cracked it open for me!)

Squeeze some limes (4 or 5?) and pour on top. Mix and let marinate for 30-40 mins. Serve with raw flax crackers!
