Autumn Root Bake
When you have a lot of root vegetables that you need to use, make a Root Bake!
Pre-heat your oven to about 350 degrees.
Coat your cast iron with a little olive oil.
Chop up your Sweet Potatoes, Yams, Beets, Purple/White Potatoes, and/or Carrots into small quarter moon slices (small enough that they don't take forever to roast). Throw in some sliced onions as well, and place sliced lemons over the top (squeeze the lemon juice if you'd like, but the sliced lemons will juice up your roots as they roast together).
Sprinkle in some thyme, rosemary, and/or sage.
Drizzle a little more olive oil over the roots, and add salt & pepper to taste.
Let them all roast together for about 30 minutes. Check on them, stir them around, and let them go another 15 minutes, or until they are tender.
Ta-Da! Autumn has arrived!
