Love these, always.
Super easy!
Get some Brussels sprouts - I typically grab a bag at Trader Joe's or the Farmer's Market. If you live along the central coast of CA (or northern), they grow in excess there!
Chop each one up a LOT.
Scoop a spoonful of coconut oil (or sesame or olive oil) into your cast iron.
Let it warm, add salt & pepper.
Then toss in your Brussels all chopped up nice! Let them sizzle and simmer.
Pour a little water over the Brussels and stir them around. Keep watch, and stir occasionally, adding water as needed (when they stick to the pan).
When the Brussels are bright green and browned a bit, they're done!
Delicious. Serve alongside black beans & grains, or mix into something like I Am Whole.
