Wanted something yummy to throw on I Am Whole and to have around. Inspired by HIP: A Vegan Joint's raw bowl (in Ojai this weekend) - found this recipe from Choosing Raw.
Cut up kale, bell pepper, and thinly sliced carrot. Poured some olive oil, salt and lots of fresh lemon juice. Added fresh thyme. Mixed it in a jar and put in the fridge! Taking it out w tongs to put on black beans, everything!
