Sesame Tofu and Kale

Super simple. Cut the tofu into thin squares. Lay them flat on a cast iron with a little bit of oil in the pan. With the heat on medium drizzle some toasted sesame oil on top and tamari. Cook the tofu like this, slowly without burning it, until it's browned on one side. Flip all the pieces and brown the other side. The trick is to be patient and not let the pan get too hot. I believe this was originally inspired by my friend Mondi when I was visiting in Minneapolis, but with thin tempeh slices. Mmm.

Sautée the kale in the sale pan after taking out the tofu. Mix it together in a bowl and you have a simple dinner that will feel nourishing! (Unless you're allergic to soy obviously.)
