I was craving potato taquitos the other night because a friend said Lucy's Drive Through had them...I tried and sadly, they did not. So I came home and fished the potatoes out of the delicious root bake Sofia made, heated up corn tortillas in the toaster oven for a couple mins (or else they crack, coming from the fridge), rolled them up around the potato and fried them in safflower oil (more like sautéed them to use less oil).
I have NO IDEA how you are supposed to make taquitos and I didn't look it up. Was too hungry. But this was seriously delicious.
