Was craving some Indian food so I looked up a recipe. It wasn't flavored the way I wanted it to be, but I was expecting it to not taste right so it was okay. Sofia was satisfied anyway. We ate it with garlic naan from Trader Joe's.
Sofia's friend told us it is called Aloo Palak though, not saag. And that we can find the right ratios of spices already mixed, so that is what I will do tomorrow!
Here it is nonetheless!
Ingredients for Aloo Saag (Spinach Potato Curry) :
Spinach 1/2 Kg
Potatoes 1/4 Kg
1 Onion Chopped
3 green chilies
3 garlic pods
ginger
1/2 tsp red chili powder
1/2 tsp cumin powder
1 tsp of coriander powder
1 tsp of garam masala
1 tsp turmeric powder
Salt to taste
Method for Aloo Saag (Spinach Potato Curry) :
Heat oil in a pan, add the garlic, ginger, green chilies, onions and sautee.
Add the spinach and cook it. (I added kale because I didn't have enough spinach and it was fine.)
Turn off the heat, let cool for a bit then blend it.
Boil the potatoes and cut into cubes. Add turmeric, salt and mix them. (I added turmeric right into the pot of water while they boiled.)
Take 1tsp of oil in a pan and saute the cumin seeds, let them splutter.
Add the spinach paste and let it boil for few minutes.
Now add the boiled potatoes, garam masala, coriander powder, cumin powder, red chili powder, and salt for taste.
Add water only if it is needed. Cook for 20 minutes covered until the potato absorbs the flavor.
