Fruity Chia Pudding


Inspired from this recipe on skinnytaste.com posted in the Post-Holidays Cleanse group -- chia seed pudding! What a delicious snack, dessert, or breakfast.

Chia Seed Pudding Recipe:

  • Put a couple tablespoons of chia seeds in a tupperware container.
  • Pour unsweetened coconut milk over it. I added a little soy milk too (I am allergic to almonds now after drinking too much almond milk!) You'll want there to be plenty of chia seeds compared to the milk, but don't put so many that it will dry up as the chia seeds soak up the liquid and expand. Play with the ratios over time as you make this, depending on how thick you want the pudding.
  • Throw in some unsweetened shredded coconut if you like.
  • Mix in some maple syrup to taste - you can use agave or honey too.
  • Cover it and put it in the fridge overnight or for a few hours. Chia seeds need to be soaked before they are eaten, as they absorb tons of moisture and you don't want them absorbing your inner moisture!
  • Mix in any fresh fruit you may have around right before eating it - blueberries, mangoes, strawberries, bananas.
