Super Easy Potato Leek Soup!



1. Get some potatoes, I used 5 or 6 medium sized.
2. Quarter the potatoes, or cut them into eighths (depending on how small you want your potato pieces)
2. Grab two bunches of leeks, or one bunch of leeks and one bunch of green onions.
3. Chop up the leeks & green onions
4. Get a big soup pot on your stove and drizzle a little olive oil. Heat the olive oil over medium for a few minutes with salt & pepper.
5. When the pot and oil are warm, throw in the leeks & green onions. Stir them to soak up the oil and S & P
6. Add the potatoes. Stir around the potatoes, leeks, & green onions.
7. Optional: add a sliced hot pepper (not too much!) to stir in with your veggies.
8. Add in 4 cups of broth (preferably veggie, but of course chicken works too)
9. Simmer on medium heat for 20 minutes, or until you can fork the potatoes easily.
10. Voila! You have a delicious potato leek soup!
